1 small head of green cabbage,shredded
3-4 carrots, shredded or chopped
1 cup mayo
1/3 cup organic sugar
1/8-1/4 cup apple cider vinegar (start with 1/8 and add to taste)
Mix dressing ingredients in a blender or food processor, pour over shredded cabbage and carrots, toss to coat, and serve chilled. *I have found that it tastes much better if you make it ahead and let the dressing soak into the veggies.*
Makes a great topping to a hearty Slow Cooked Barbecue Beef Sandwich!
